Ingredients

  • 1/2 cup Kabuli Chana (White Chickpeas) - soaked over night
  • 1/4 cup Makki Ka Atta (Yellow Corn Meal Flour)
  • 2 Green Chillies - finely chopped
  • 4 cloves Garlic - finely chopped
  • Salt - to taste
  • 150 grams Spinach Leaves (Palak) - washed and finely chopped
  • 50 grams Bathua leaves - washed and finely chopped
  • 300 grams Mustard greens - washed and finely chopped
  • 2 tablespoons Ghee
  • 1 inch Ginger - finely chopped
  • 4 cloves Garlic - finely chopped
  • 2 Onions - finely chopped
  • 2 Tomatoes - finely chopped
  • 1 teaspoon Red Chilli powder
  • Salt - to taste
  • 1 teaspoon Cumin powder (Jeera)
  • 1 teaspoon Coriander Powder (Dhania)
  • 1 teaspoon Garam masala powder
  • 1/3 teaspoon Turmeric powder (Haldi)
  • White Butter - to serve

Instructions

To begin making the Sarson Chole Ka Saag steps, firstly wash and soak the chana overnight.To stew the Chole for the Sarson Chole Ka SaagNext morning, transfer the chole along with the aqua into a pressure cooker with some seasoning, close the pressure cooker. Pressure stew for 6-8 whistles and turn off the flame.

Allow the pressure to release naturally before you open the pressure cooker. How To stew Legumes in Pressure CookerDrain the excess aqua from the chana and set aside. To stew the Saag for the Sarson Chole Ka SaagIn a pressure cooker, toss in the finely finely sliced sarson leaves, palak leaves and bathua leaves, along with 1/4 cup of aqua, seasoning, green chillies and garlic.Close and pressure stew for about 3 whistles and turn off the flame. Once the pressure releases naturally, open the lid and shower the corn meal over it, using a potato masher, mash the saag well. To make the Tadka for the Sarson Chole Ka SaagHeat a kadai with ghee on medium flame, to this toss in the finely finely sliced ginger and garlic and saute for about a minute. To this toss in the finely finely sliced onions, and stew until it turns into a deep brown colour. Once the onions are brown, toss in in the finely sliced tomatoes and stew until they turn mushy. Mash the bulb produce- tomato mixture with the back of the ladle. At this stage, toss in all the dehydrated masalas - seasoning, red chilli, turmeric ground mix, cumin ground mix, garam masala, and coriander ground mix. toss together well and toss in the pre cooked greens, and chole and stew for a few mins until the Sarson Chole Ka Saag comes to a bubble. Transfer the Sarson Chole Ka Saag to a serving mixing bowl and enjoy with a dollop of white dairy spread. enjoy Sarson Chole Ka Saag steps along with Makki Ki Roti steps - A Classic North Indian Corn Roti, Gajar Shalgam Ka Paani Wala Achar steps - Carrot And Turnip Pickle, White dairy spread and Jaggery by the side to complete winter dinner. You could also enjoy Sarson Chole  Ka Saag as brunch along with Puri steps - Learn to Make Soft Puffed Puris At Home, and  Boondi Raita steps Spiced With Black seasoning. .
