Ingredients

  • 300g Pinto Beans
  • 1 chopped Onion
  • 1 tablespoon Paprika
  • Sprigs of fresh Thyme
  • Pinch Bay Leaves
  • Bunch Parsley
  • 4 Chicken Thighs
  • 250g Jersey Royal Potatoes
  • 250g Chorizo
  • 100g Spinach

Instructions

step 1 Soak the beans for at least 4 hrs or overnight in a large dish with plenty of moisture to wrap.

Next day, rinse and filter, then put in a large heavy based pot with the shallot, paprika, aromatics bundle and chicken.

empty over enough moisture or stock to wrap, bring to the heat to boiling point, then reduce the burning up, wrap and stew for 45 mins.

step 2 Remove the chicken to a plate, then mix in the potatoes and chorizo to the pot.

Continue preparing for 30 mins until the beans and potatoes are succulent.

step 3 Discard the skin and bones from the chicken and tear into large chunks.

Return the chicken to the pot with the spinach and stew for 5 mins.
