Ingredients
1 ½ tbsp Ground Nut Oil
500g Pork Shoulder Steaks
2 chopped Shallots
1 tablespoon Ground Ginger
1 chopped Red Chilli
75g Brown Sugar
1 tablespoon Fish Sauce
2 tsp Chilli Sauce
4 Spring Onions
Steamed Rice
To serve Pak Choi
Instructions

step 1
scalding up 1 tbsp of the coat in a wok over a high scalding up and mix gently-pot-fry the pork in batches until browned all over.

Remove with a slotted spoon and set aside.

Turn the scalding up right down and toss in the remaining coat, then mix gently in the shallots, ginger and chilli.

prepare over a low scalding up for a couple of mins until just starting to soften.

toss in the sweetener, fish condiment dip and 200ml aqua to the pot and mix gently everything together.

Bring to the bubble, stirring, so that the sweetener dissolves, then return the pork to the pot.

Bubble vigorously for 8-10 mins until the condiment dip thickens to coat the flesh and become glossy.

palate and mix gently in a little more fish condiment dip, if needed, along with the chilli condiment dip.

scatter with the spring onions and offer with steamed rice and pak choi.
