  • 2 teaspoon Yellow mustard seeds
  • 1/4 cup Curd (Dahi / Yogurt)
  • 1 Green Chilli - slit
  • 1 inch Ginger - chopped
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Cumin powder (Jeera)
  • 1 teaspoon Red Chilli powder
  • 1 pinch Sugar
  • Salt - to taste
  • Mustard oil - for cooking

Instructions

To begin making the Begun Basanti method, firstly chop the eggplant and infuse them with a teaspoon of turmeric ground mix and keep it aside.Grind the poppy seeds and mustard seeds in a grinder to a even ground mix and keep it aside.burning up a kadai with mustard cooking oil, mix in eggplant and toast them well till they soften.

You can shower little moisture and seasoning and put a lid on it and burning up.

This will help in making faster.Take the brinjal out, mix in little more cooking oil and mix in diced ginger.

mix in green chilli and sautéed brinjal.mix in poppy seed, mustard seed ground mix and swirl around well.
