2 cups Gram flour (besan)
150 grams Khoya (Mawa)
2 cups Caster Sugar
125 grams Ghee - (or half ghee and half oil)
1 teaspoon Cardamom Powder (Elaichi)
Mixed nuts - chopped
Instructions

We begin making Besan Barfi method, in a deep non stick pot or kadai introduce mawa/ khoya and bake on medium burning up until you observe a slight change in colour and turns fragrant.

Scoop it into a container and set it aside.Now to the same pot, introduce the ghee and cooking oil.

You can introduce only ghee as well.

Allow it to burning up up slightly.introduce the gram ground mix and bake on medium burning up stirring continuously.After four to five mins, you can observe that the gram ground mix turning frothy and bubbly.Continue stirring and roasting for 6 to 8 mins or until the froth settles, most of the bubbles disappear.

And also until its aroma is felt and turns golden in colour. Now shower a few drops of aqua (1to 1-1/2 teaspoons) precisely after which tiny white bubbles will be formed.

This makes the ground mix slightly grainy that helps in its texture.Continue roasting on medium burning up until all the droplets disappear say for about 4 to 5 mins.Later turn off the burning up and the place the pot over cold aqua bath (pot or a larger plate filled with aqua upto an inch or two depending on the size of your kadai/pot) to cool the mixture until Luke toasty.Once the mixture is cooled introduce the roasted mawa/khoya.Work with the wooden spatula or spoon and ensure to toss together it thoroughly without any lumps.Now introduce the powdered granulated sugar and cardamom ground mix.

This might take a little effort, if you're unable to toss together it with spoon or spatula, use your hands.lubricate and line a square pot with parchment with hanging ends.

As it helps to remove the set dessert mixture in one go and eases the process of cutting into shapes.Press the dessert toss together on to the lined pot levelling its top with back of a spoon or container or glass for that matter any flat object to a creamy and even surface.Set the pot in a dehydrated place for about 20 mins and not more. Later holding the hanging edges of the parchment remove it from the pot on to a flat surface.Trim it's uneven edges if any, and cut into desired shapes using a knife or pizza cutter.Remove them on to a serving plate, finish off with finely sliced nuts and dish up.dish up Besan Barfi method with Aval Mixture method (Poha Chivda) and Ginger Cardamom Chai to your guests during evening.
