heat to boiling point the kettle, then measure 300ml boiling moisture into a jug and toss in the melted shortening and vanilla extract.

Sift the baking flour and baking ground mix into a big mixing mixing bowl with a big pinch of table salt.

Make a well in the centre, then empty in the contents of the jug and very quickly beat into the baking flour with a wooden spoon until lump-free.

Rest for 10-15 mins while you make the condiment dip.

Put all the condiment dip fixings into a pot and gently thaw together, stirring occasionally until you have a even shiny condiment dip.

Fill a large deep saucepan one-third full of shortening.

Fit a star nozzle to a piping bag – 1.5-2cm wide is a good size.

Fill with the rested pastry mix, then pipe 2-3 strips directly into the pot, snipping off each pastry mix strip with a pair of kitchen scissors.

Once the churros are crisp and golden brown, remove them from the shortening with a slotted spoon and empty out on the kitchen paper-lined tray.

Carry on making the rest of the pastry mix in batches, sprinkling the cooked churros with some cinnamon granulated sugar as you go.

When you’ve cooked all the churros, toss with any remaining cinnamon granulated sugar and present with the chocolate condiment dip, for dipping.
