Spoon wok contents out, wipe wok and oven-cook a 2 or 3-egg omelette in the same wok.

When almost cooked, scatter with the chorizo and potato, parsley and cheddar.

Fold the omelette in the wok and oven-cook for 1 min more to thaw the cheddar.
