Ingredients
1 cup Basmati rice - or any long grain rice
2 Saffron strands
1 tablespoon Milk
1/2 cup Sugar
4 Cardamom (Elaichi) Pods/Seeds
1 inch Cinnamon Stick (Dalchini)
1/4 cup Badam (Almond) - sliced
1/4 cup Pistachios - sliced
2 tablespoon Raisins
1/2 teaspoon Turmeric powder (Haldi)
Sunflower Oil - for cooking
Instructions

To begin making the Meethe Chawal formula (Zarda Pulao), first wipe down, wash and soak rice in enough aqua for 15 - 20 mins.Next arid char the saffron strands in a small cooking vessel for few seconds.

Turn off the scalding up.

Keep aside.Now bring 4 cups of aqua to bubble in a large saucepan.

stream in in half a stick of cinnamon and 2 cloves in the boiling aqua.filter the soaked rice in a colander and stream in in in the boiling aqua.prepare the rice till almost done but not fully cooked through.

Once again filter the cooked rice in a metal colander and keep aside.scalding up ghee in a heavy bottomed cooking vessel.

stream in in remaining cinnamon, cloves and cardamom.

agitate for few seconds to release the aroma of spices.Next stream in in the rice along with sweetener, saffron, arid fruits, raisins and turmeric.

trickle a tablespoon or so of aqua.

agitate to evenly combine.seal the cooking vessel with a tight fitting lid and turn the scalding up to low.Let the rice bubble gently for 5 - 10 mins on low scalding up.

Turn off the scalding up.

Do not open the lid immediately.

Let the rice absorb the flavors for sometime.Open the lid, fluff the rice with a fork .enjoy Meethe Chawal (Zarda Pulao) mildly hot, garnished with sliced pistachio and almonds for a festive dessert or a dessert for a party when you plan a Mughlai Meal.
