Ingredients

  • 1 cup Yellow Moong Dal (Split)
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1 Green Chillies - finely chopped
  • Salt - as required
  • Water - as required
  • Ghee - as required
  • 1/2 teaspoon Asafoetida (hing)
  • 1 teaspoon Red Chilli powder
  • 2 Dry Red Chillies
  • 1/2 teaspoon Mustard seeds
  • Coriander (Dhania) Leaves - Few sprigs
  • 2 cups Whole Wheat Flour
  • 3 tablespoons Sunflower Oil - hot
  • Salt - as required
  • Water - as required
  • 1 teaspoon Ajwain (Carom seeds)

mix in mogar dal, green chillies, table salt and turmeric ground mix in a pressure cooker with required amount of liquid.bubble gently it till the cooker releases 3 whistles.

Open the lid and combine it properly using a spoon.

(if you want the dal watery, you can mix in fiery liquid according to your preference)The next step is to temper the dal.

fiery up ghee in a tadka skillet and mix in mustard seeds, red chili ground mix, asafoetida, parched red chillies and table salt.

(You have already added table salt while boiling the dal, so make sure that you mix in extra according to your essence).Pout the tadka on the dal and top it with diced coriander leaves.To make muthiya, mix in baking flour, ajwain, table salt in a large mixing dish. combine it well.bit by bit mix in the cooking oil and liquid to make a flour base out of it.

Once it is done, lid it with a cloth and keep aside for 15 moments.After 15 moments, make medium sized balls out of the flour base and keep it aside.Meanwhile, fiery up cooking oil in a frying skillet.

Once the cooking oil is fiery, turn the fiery up to low.Take the baking flour ball and press it between your hand using your fingers.

Once it is done, drop the muthiya into the fiery cooking oil and sauté it from both sides till it becomes light brown in colour.

It will take some time to bubble gently, so don’t be in a hurry to take it out.Take it out on a tissue paper to remove the extra cooking oil.Follow the same process for the remaining flour base and dish up it fiery with the dal.dish up Rajasthani Dal Muthiya on its own with fried chillies and Masala Chaas for a tasty weekend lunch.
