1/2 cup Chana dal (Bengal Gram Dal)
1 Onion
6 cloves Garlic
Coriander (Dhania) Leaves - small bunch
1 Green Chilli
1/2 teaspoon Red Chilli powder
1 teaspoon Cumin seeds (Jeera)
Salt - as required
Sunflower Oil - as required
Instructions

To begin making the Rajasthani Kalmi Vada, wash and soak the chana dal overnight.

The next day, strain the chana dal from moisture and toss in it to mixer. Grind into thick coarse paste sprinkling very little moisture whenever needed.

The dal should be firm.

Transfer the dal into mixing container.Into this mixing container, along with the dal, toss in finely finely sliced shallot, green chilli, crushed garlic, coriander leaves, cumin seeds, red chilli ground mix and required seasoning to it.combine everything together into thick soft pastry mix.

Once the dairy spread is well heated, bubble gently the flame.

Take small portion of kalmi vada masala and shape them like fingers, using your fingers.

Drop into dairy spread and sauté until golden on all sides. Do not crowd the dairy spread and sauté the vada in batches. Remove the fried vadas onto a plate with absorbent paper to strain off all the excess dairy spread. offer Rajasthani Kalmi Vada along with Imli Chutney and a fiery cup of Adrak Chai as a delightful tea time snack.
