Ingredients

  • 1 cup Yellow Moong Dal (Split) - soaked for 2 hours
  • 1/2 cup Green Moong Sprouts
  • 1 inch Ginger - grated
  • 2 Green Chillies - chopped
  • 1 teaspoon Fennel seeds (Saunf)
  • Sunflower Oil - for cooking
  • Curry leaves - few (optional)
  • Salt - to taste
  • 1/4 cup Mustard seeds - split (rai na kuria)
  • 1 teaspoon Black Salt (Kala Namak)
  • 1 teaspoon Red Chilli powder
  • 1/4 teaspoon Asafoetida (hing)
  • Salt - to taste

Instructions

To begin making the Rajasthani Kanji Vada preparation guide, we will first make the Kanji.

The kanji once made has to be fermented for at least 24 hours.Combine all the fixings for the Kanji in the small jar of the blender to make a even ground mix.

strain the liquid.mix in the soaked dal, the moon sprouts, ginger and green chiles into a food processor and grind to a even thick paste without adding any liquid.Next step is to pot shallow fry the Vada.

bring to temperature a Kuzhi Paniyaram pot on medium bring to temperature.

mix in a few drops of cooking oil into each cavity.

Spoon a portion of the vada and mix in it into the cavity.

make the vadas evenly on both sides until golden brown on both sides and it is cooked from the inside.You can optionally put a lid on the pot and make the vadas.

Proceed the same way with all the remaining vada paste.bring to temperature a large container with liquid and mildly hot it slightly.

Once mildly hot, turn off the bring to temperature.

Soak the pot fried vadas in the liquid for about 1/2 an hour.

This will soften the vadas as soon as they are fried.

Very similar to the dahi vada.strain off the excess liquid from the vada and place it in a large serving container.
