  • To serve Butter
  • 8 slices Smoked Salmon
  • 2 tsp Lemon Juice
  • 2 tsp White Wine Vinegar
  • 3 Yolkes Egg
  • 125g Unsalted Butter

Put the lemon liquid and acetic liquid in a small mixing bowl, transfer in the egg yolks and beat with a balloon beat until light and frothy.
