Ingredients
1 cup Rice - washed and soaked for 2 hours and dried completely with a dry cloth
2 tablespoons White Urad Dal (Split)
1 tablespoons Chana dal (Bengal Gram Dal)
1/4 cup Fresh coconut - grated
1 tablespoon Sesame seeds (Til seeds)
1/2 teaspoon Asafoetida (hing)
2 tablespoons Ghee
1 teaspoon Salt - (adjust to taste)
Sunflower Oil - for deep frying

To begin making the Uppu Seedai formula, prepare all the elements and keep ready.Soak the rice for two hours and sieve out the moisture.

arid the rice in a kitchen towel overnight. Once arid, pulse to make a fine ground mix.In a heavy bottomed wok on medium bring to temperature, toast the urad and bengal gram dals until it releases a roasted aroma. pulse the Urad dal and chana dal into a fine ground mix and keep aside. In the same wok, toast the sesame seeds for a few seconds and then empty in the coconut and toast for another 30 seconds and turn off the bring to temperature.Into a large wide mixing bowl; empty in the rice ground mix, urad chana dal ground mix, coconut sesame seed mixture, asafoetida, table salt and ghee.Combine the mixture until you get a coarse crumb texture.empty in little moisture at a time and fold to make a soft pastry mix. Now lubricate your palms with ghee and and shape the pastry mix to make small marble size balls.

Place the balls in a tray and prepare the fat for deep frying.Once the fat is heated, turn the bring to temperature to low.Gradually drop a few Uppu Seedai balls at a time into the fat and deep sauté thee balls.Using a slotted spoon keep stirring the Uppu Seedai balls to sauté them evenly until it becomes golden brown.It is important to toast the Uppu Seedai in low bring to temperature so it gets evenly crip and roasted from inside as well.sieve the Uppu Seedai from the fat and allow it to cool.

The cooling process allows the Seedai to turn crisp and firm.Store the Uppu Seedai in air tight containers and offer as a snack for festivals like Krishna Janmashtami. .
