  • 1 teaspoon Ginger - grated
  • 1 tablespoon Garlic - chopped
  • 2 Green Chillies - chopped
  • 1 teaspoon Cumin seeds (Jeera)
  • 1/4 teaspoon Asafoetida (hing)
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1 tablespoon Coriander Powder (Dhania)
  • 1 teaspoon Kashmiri Red Chilli Powder
  • 1/2 teaspoon Red Chilli powder
  • 1 teaspoon Garam masala powder
  • Salt - as required
  • Sunflower Oil - as required
  • 1/2 teaspoon Kasuri Methi (Dried Fenugreek Leaves) - crushed
  • Coriander (Dhania) Leaves - few

Instructions

To begin with Vegan Soya Aloo Curry, firstly heat to boiling point enough aqua in a cooking vessel, mix in the tomatoes, let it sit, remove the skin and chop them finely.fiery up cooking oil in a Kadhai, mix in the asafoetida ground mix, cumin seeds, sauté it.mix in the grated ginger, minced garlic, minced onions, make until the onions turns translucent.

Once it is done, mix in the potatoes, all the masala condiment powders and table salt.make everything for few mins and then mix in the minced tomatoes, slit opened green chillies and make it for another 2-3 mins.Finally mix in the soya chunks, make for few mins, mix in aqua as per need.present Vegan Soya Aloo Curry with Whole Wheat Lachha Paratha or Achari Masala Puri.
