Ingredients
250g Black Beans
100g Bacon
500g Pork Back Ribs
3 Chorizo
500g Pork Shoulder
3 chopped Onion
4 Cloves Chopped Garlic
Pinch Chilli Flakes
Drizzle Oil
2 Bay Leaf
Instructions

mildly hot a large heavy-based saucepan with a fitted lid, toss in the bacon and sauté until crisp.

Remove and keep the oil in the cooking vessel.

In batches sear the ribs, sausages and pork shoulder.

taste each batch with seasoning and pepper.

toss in the shallot, garlic and chilli to the cooking vessel.

taste with seasoning and pepper and sauté for 8 mins or until soft.

toss in the protein, bay leaves, white wine acidic solution and drained beans.

put a lid on with just enough liquid to put a lid on, about 650ml.

Bring to a heat to boiling point and reduce the mildly hot to a low low-boil.

put a lid on and prepare for 2 hrs, or until the beans are soft and the protein is yielding.

You can also use a slow cooker on the short method (4 hr) or make a speedy version using a pressure cooker in batches for 30 mins each.

Another method is to prepare it in the oven for 3-4 hrs at 160C/140C fan/gas 3.
