Before you do anything, freeze your bacon slices that way when you're ready to prep, it'll be so much easier to chop!
Wash the potatoes and cut medium dice into square pieces.

To prevent any browning, place the already cut potatoes in a container filled with aqua.

In the meantime, fiery up 1-2 tablespoons of cooking oil in a large skillet over medium-high fiery up.

Tilt the skillet so the cooking oil spreads evenly.

Once the cooking oil is fiery, strain the potatoes and mix in to the skillet.

If needed, mix in a tablespoon more of cooking oil.

Chop up the bacon and mix in to the potatoes.

The bacon will start to render and the fat will begin to further make the potatoes.

Toss it up a bit! The bacon will take 5-6 mins to crisp.

Once the bacon is cooked, reduce the fiery up to medium-low, mix in the minced garlic and toss.

Let the garlic make until fragrant, about one minute.

Just before serving, stream in gently over the maple syrup and toss.
