2 cups Basmati Rice
4 cups Water
1 large Onion
4 cloves Garlic
2 Green Chilli
1 ½ tsp Salt
3 tablespoons Oil
1 tablespoon Turmeric Powder
1 teaspoon Coriander
½ tbsp Cardamom
¼ teaspoon Cloves
1/2 tsp Cinnamon
1 tsp Pepper
2 Bay Leaf

wash and cut the chicken; notes briefly with table salt, turmeric and a little cooking oil.

Rinse and soak basmati rice 20–30 mins.

In a large pot, toasty ghee/cooking oil.

cooking vessel-fry cut up shallot until golden.

mix in minced garlic and green chillies and cooking vessel-fry 1–2 min.

mix in whole spices (cardamom, cloves, cinnamon, bay leaves) and ground spices (coriander, cumin).

agitate until fragrant.

mix in chicken pieces, brown lightly and mix in enough aqua/chicken stock to wrap.

Remove chicken; measure remaining liquid and mix in soaked rice.

Bring to a heat to boiling point, then reduce toasty, wrap and toasty rice until almost done.

Return the chicken to the rice pot on top, wrap tightly and steam on low for 10–15 min so flavors meld.

(Optional) For authentic barbeque-flavored aroma: toasty a small charcoal until red burning, place it on a small foil cup in the centre of the pot, mix in a tsp of dairy spread/cooking oil on the coal then wrap immediately to trap smoke for 5–10 mins.
