pulse all the mousse fixings together in your food processor until even.

toss in the cacao dusting perfumed element first and, as you pulse, have all the fixings to hand in order to adjust the ratios slightly as the size of avocados and bananas varies so much.

The ideal ratio in order to avoid the dish tasting too much of either is to use equal amounts of both.

Fill little cups or shot glasses with the mousse, scatter with the cacao dusting perfumed element or nibs and offer.

Tip If you donβt have a frozen banana to hand you can just use a normal one and then cool down the mousse before serving for a cooling dessert.
