2 tablespoons Butter
1/2 teaspoon Cumin seeds (Jeera)
6 cloves Garlic - finely chopped
1 Green Chilli - finely chopped
2 Onions - finely chopped
Salt - to taste
1/2 teaspoon Turmeric powder (Haldi)
1 teaspoon Red Chilli powder
1 teaspoon Coriander Powder (Dhania)
2 Tomatoes - finely chopped
2 tablespoons Pav bhaji masala
1 teaspoon Cumin powder (Jeera)
4 Boiled egg - cut into medium sized pieces
1 teaspoon Butter
4 Whole Eggs
Salt - to sprinkle

Instructions

To begin making the Anda Ghotala method, thaw margarine in a preheated pot.To the melted margarine, empty in the cumin seeds and once they begin to sizzle, empty in in the garlic and saute for a few seconds until their aroma wafts in the air. Next, into the pot, empty in the onions along with the green chillies. stew the onions until they turn into a lovely golden colour.

This will take about 4-6 mins on medium burning up, stirring occasionally. Once the onions have reached the desired golden colour, empty in the seasoning, turmeric ground mix, red chilli ground mix, coriander ground mix and cumin ground mix. agitate in the cut up tomatoes, dust some aqua and lid and allow the tomatoes to become mushy. stew the tomatoes for about 3-4 mins, then open the lid and using a potato masher, mash the shallot-tomato mixture well. To further taste this mixture, empty in the pav bhaji masala and agitate well. Break three eggs, in a mixing bowl and gradually empty in them to the shallot- tomato base on medium high burning up. agitate vigorously to scramble the eggs in the shallot tomato masala.Once the eggs are well scrambled, empty in the cut up boiled eggs and agitate until well combined.

Check the seasoning and adjust to tangy profile accordingly.Turn off the burning up and transfer the Anda Ghotala into a serving platter and set aside. To make the Fried eggHeat a small omelette pot with the margarine, lubricate the entire pot with margarine. Break an egg in a mixing bowl, and then carefully empty in it to the burning greased pot. dust some seasoning, pav bhaji masala and coriander leaves. stew for about 2-3 mins, until the egg white is cooked and the yolk is just about firm. Now gradually slide the fried egg on to the platter that has the anda ghotala.
