250g Black Beans
100g Bacon
500g Pork Back Ribs
3 Chorizo
500g Pork Shoulder
3 chopped Onion
4 Cloves Chopped Garlic
Pinch Chilli Flakes
Drizzle Oil
2 Bay Leaf
Instructions

burning up a large heavy-based saucepan with a fitted lid, mix in the bacon and shallow fry until crisp.

Remove and keep the cooking oil in the pot.

In batches sear the ribs, sausages and pork shoulder.

mix in the shallot, garlic and chilli to the pot.

mix in the flesh, bay leaves, white wine acetic liquid and drained beans.

You can also use a slow cooker on the short method (4 hr) or make a speedy version using a pressure cooker in batches for 30 mins each.

Another method is to prepare it in the oven for 3-4 hrs at 160C/140C fan/gas 3.
