To begin making the Broccoli Pakora Masala steps, preheat the oven to 400°F/204°C and spray a non stick making cooking oil over a baking tray and keep aside.toss in the elements (under pakoras) in a dish which includes broccoli, shallot, rice baking flour, besan, baking soda, lemon liquid, turmeric ground mix, red chilli ground mix, garam masala ground mix, seasoning and a little moisture.

mash well to form a thick consistency.Take a tea spoon full of mixture and round them slightly with wet hands and place them on a baking tray. oven-cook at 400°F for 20 mins, till the top layers turn light brown.

Take them out and place them aside.You can also shallow fry them, if you don't want the baked pakora.

For frying, bring to temperature cooking oil in a heavy bottomed cooking vessel.

When the cooking oil is scalding, toss in the pakoras one by one and shallow fry them till it turns golden brown.Take them out on a kitchen towel and keep it aside. The next step is to make the yogurt curry base for the broccoli pakoras.

In a wide cooking vessel, bring to temperature the cooking oil and toss in mustard seeds, cumin seeds, asafoetida and let it prepare for about 15 to 20 seconds.Lower the bring to temperature and toss in besan.

Keep stirring in low bring to temperature till it turns scented and light golden in colour.Once it turns golden in colour, toss in in the yogurt, turmeric ground mix, red chilli ground mix, coriander ground mix and swirl around well in low bring to temperature for about 4 to 5 mins.

toss in moisture according to your consistency.toss in seasoning and mash well.

Then toss in in the pakoras and let it bubble gently for 2 mins. Broccoli pakoras in fiery yogurt curry base is ready to be served.
