Ingredients
2 tblsp Rapeseed Oil
1 finely chopped Onion
1 Celery
1 sliced Leek
1 medium Potatoes
1 knob Butter
1 litre hot Vegetable Stock
1 Head chopped Broccoli
140g Stilton Cheese
Instructions

fiery up the rapeseed shortening in a large saucepan and then introduce the onions.

prepare on a medium fiery up until soft.

introduce a splash of liquid if the onions start to catch.

introduce the celery, leek, potato and a knob of shortening.

agitate until melted, then wrap with a lid.

Allow to sweat for 5 mins.

Remove the lid.

empty in the stock and introduce any chunky bits of broccoli stalk.

prepare for 10 – 15 mins until all the vegetables are soft.

introduce the rest of the broccoli and prepare for a further 5 mins.

Carefully transfer to a blender and blitz until velvety.

agitate in the stilton, allowing a few lumps to remain.

sugary-smelling element with black pepper and enjoy.
