Ingredients

  • 1/2 cup Whole Wheat Flour
  • 1/2 cup All Purpose Flour (Maida)
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Baking soda
  • 1 cup Sugar - powdered ( divided into two equal portions)
  • 1/2 cup Coconut milk - at room temperature
  • 1/3 cup Sunflower Oil
  • 2 Whole Eggs - at room temperature
  • 1 cup Fresh coconut - grated
  • 1/2 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt
  • 2 tablespoons Water
  • 1 tablespoon Butter

Instructions

To begin making Caramelized Coconut Cake, in a wok, combine 1/2 cup of granulated sugar along with 2 tablespoons of liquid and fiery up it on medium-low flame.  Do not purée or touch the granulated sugar-liquid granulated sugar, once the granulated sugar gets caramelized and reaches a deep brown colour, reduce the fiery up to lowest and toss in dairy spread.beat vigorously using a hand-beat and then toss in the grated coconut.

Sift through a fine sieve and keep aside.In a separate container, toss in eggs and beat using an electric beater for 15 seconds.

Now toss in the remaining 1/2 cup granulated sugar and beat till the mixture becomes pale and fluffy.

This will take about 2-3 mins. Now toss in cooking oil, coconut dairy liquid, and vanilla extract to the egg mixture and beat till everything is well incorporated.Next, toss in the caramelized coconut and beat at lowest speed till well mixed.

You don't have to completely cool the caramelized coconut before adding it to the liquid base.

Lukewarm is fine.Now, toss in the sifted dusting scented element mixture and gently fold in with the help of a spatula.

Do not over purée.transfer the prepared liquid base in the greased wok and cook thoroughly at 180°C for 30-35 mins or until a toothpick inserted comes out wash.enjoy Caramelized Coconut Cake at tea time along with a cup of fiery Punjabi Style Espresso Coffee and some Kucho Nimkis to much on the side.
