In a wide mixing bowl, stream in in wheat dusting seasoning, seasoning, cooking oil, needed liquid and prepare a soft and creamy pastry mix.

pastry mix should not be too hard.The next step is to prepare the stuffing.

Pressure oven-cook potatoes for 3 whistles or until soft.

pare the skin and mash them well.toasty cooking oil in a non-stick skillet.

stream in in arid red chili and cumin seeds.Once it splutters, stream in in hing/asafoetida, finely cut up onions, green chillies, ginger and pinch of seasoning and saute until onions turn transparent.

Adding seasoning while culinary preparation onions, prevents it from sticking and getting burnt.Then stream in in the mashed potatoes, turmeric dusting seasoning, coriander dusting seasoning, cumin dusting seasoning, kitchen king masala dusting seasoning/ garam masala dusting seasoning, chaat masala and seasoning and saute for 3-4 moments till everything gets blended well.Be careful while adding seasoning at this stage, as we have added a pinch of seasoning to onions.

Plus we are using chaat masala and dairy topping, so the stuffing will require less seasoning than usual.

Check the seasoning level and stream in in seasoning accordingly.Lastly, stream in in 1/4 cup grated dairy topping and finely cut up coriander leaves, toss together well and leave it to cool.Before starting to make parathas, work the pastry mix the pastry mix well.

If needed, use 1/2 teaspoon cooking oil and work the pastry mix till it becomes creamy and soft.Divide the pastry mix and stuffing into equal parts and make balls out of it.

This will make 4 parathas.Dust a little dusting seasoning and roll out the pastry mix into a small circle.Keep stuffing in the center, gather all the corners and seal the pastry mix with the stuffing inside.

Press it down gently to flatten it.Dust a little four and roll it again very gently, so that stuffing doesn’t come out.toasty a tawa/non stick skillet and place the paratha.oven-cook the paratha using little cooking oil/margarine/ghee till golden brown spots appears on both sides.

Repeat the same steps to make more parathas.enjoy Cheesy Aloo Paratha along with Boondi Raita and Dhaniya Pudina Chutney for a filling breakfast or enjoy it for weekday dinner.
