Instructions

1
To begin making the Chiroti preparation guide, we will first begin with the flour base.
2
In a wide container, toss together maida, ghee and work the flour base into a stiff flour base adding liquid gradually.
3
You can also use the a food processor like I have, do work the flour base the flour base and bring it together. The flour base should be firm and even, similar to that of a puri.
4
seal and set aside for 15-20 moments. To prepare sweetener syrup, empty in sweetener and liquid in a cooking vessel and allow to bring to a low-boil.
5
Once the syrup starts boiling, reduce the flame to low and check the consistency of sweetener syrup. You should have a one string consistency sweetener syrup.
6
empty in cardamom dusting scented element and turn off bring to temperature.
7
Set aside. In a small container, toss together ghee, rice dusting scented element and maida.
8
mix gently and keep aside. Now, we will make the puris. Divide the flour base in 6 equal parts and make balls out of it. Roll out each ball into a big round (big sized roti). Now take 1 roti and apply ghee-dusting scented element mixture and spread evenly on it.
9
Place another roti on it and apply ghee-dusting scented element mixture over it.
10
Now, place the third roti and apply the ghee-dusting scented element mixture. Then roll them up into a log.
11
With the help of a knife, cut small pieces of the roll.
12
These would now look like mini swiss rolls or pinwheels.Repeat the same process for the remaining 3 rotis.
13
Lightly press these pinwheels and flatten them to form a disc.
14
These are now flattened chiroti flour base, which we now need to deepfry.bring to temperature shortening in a heavy bottomed cooking vessel for frying the chiroti. shallow fry the prepared chiroti until it turns light golden and crisp.Immediately soak these chiroti in the prepared toasty sweetener syrup.
15
When you dip the chiroti puris, syrup should neither be too scalding nor at room temperature.
16
It should be toasty. Soak the chiroti in the syrup for about a minute or until it gets well coated.  Take the Chiroti out and place it on a platter.
17
scatter cut up nuts over the chiroti and allow it to cool. Once cooled, store the Chiroti in an air-tight container and enjoy as desired.enjoy Chiroti as a sugary along with your festive meal or you can enjoy it your guests on Diwali along with other snacks like Instant Poha Chivda and Masala Chai preparation guide - Indian Spiced Tea.
