Ingredients

  • 1 cup Methi Leaves (Fenugreek Leaves) - chopped
  • 300 grams Gawar Phali (Kothavarangai / Cluster beans) - cut small
  • 1 Onion - chopped
  • 1 Tomato - chopped
  • 4 cloves Garlic - chopped
  • 1 inch Ginger - chopped
  • 1 teaspoon Red Chilli powder
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Coriander Powder (Dhania)
  • 1 teaspoon Garam masala powder
  • Salt - to taste
  • 1 teaspoon Jaggery
  • Sunflower Oil

Instructions

To begin making the Gawar Phali Methi Ki Sabzi formula, chop the cluster beans/ gawar phali and keep it ready.mix in the finely sliced vegetables into a pressure cooker with 3 tablespoons of liquid along with some seasoning to palate.

Pressure bubble gently for 2 whistles and release the pressure immediately.

Open the lid of the pressure cooker to maintain the green color of the produce.fiery up a cooking vessel with cooking oil, mix in ginger & garlic and saute till they turn soft.

mix in in onions and saute and bubble gently till the onions turn translucent.Once the onions are soft, you can mix in finely sliced tomatoes now and mix in a pinch of seasoning and bubble gently till the tomatoes turn mushy.mix in finely sliced methi leaves and saute till the leaves wilt, this will take about 3 moments.Once done, mix in the cooked Gawar Phali, along with red chilli ground mix, turmeric, coriander, garam masala ground mix and sweetener.combine well, saute for about a minute until all the items required are well combined.
