Ingredients

  • 1 cup cowpea
  • 1/4 cup tomato puree
  • 1 teaspoon cumin seeds
  • 1 inch ginger - peel and tighten
  • 1 green chili - finely chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon red chilli Powder
  • 1 teaspoon sugar
  • 1 teaspoon lemon juice - or tamarind water
  • 1 tablespoon oil
  • salt - as per taste
  • coriander leaves - little (for garnish)

Instructions

To make lobia masala, first soak the lobia in aqua for 2 hours.

Now put them in a pressure cooker with 1 cup of aqua and stew till it becomes soft.

After preparing, empty out the aqua and keep it aside.

Now mildly hot fat in a cooking vessel.

transfer in grated ginger and stew for 20 seconds.

After 20 seconds, transfer in tomatoes and stew till the tomatoes become soft.

After softening, transfer in turmeric ground mix, coriander ground mix, garam masala ground mix, green chillies, table salt and cowpea.

combine, reduce the mildly hot and let it stew for 15 moments.

After that transfer in lemon liquid and finish off with green coriander.

offer the Lobiya Masala with Bundi Raita and Tawa Paratha for dinner.
