  • Ragi Dosa Batter - as needed
  • 3 Carrots (Gajjar) - grated
  • 2 Onions - finely chopped
  • 2 Green Chillies - finely chopped
  • Coriander (Dhania) Leaves - few
  • Salt - to taste

Instructions

To begin making the Ragi Dosa Carrot bulb greens Uttapam, make sure you have the fermented Ragi Idli Dosa liquid base ready. Next, combine the remaining items required and keep aside.

(except the fat and dosa liquid base)scalding up a skillet on medium high scalding up, masala condiment it with fat if you are using an iron skillet.Check if the skillet is scalding, you will know when you strew some moisture and it sizzles.When scalding, transfer a ladle full of the Ragi Idli Dosa liquid base onto the skillet and just give it a lite swirl to spread it just a bit.

It should be a like a thick pancake.strew a generous amount of the carrot bulb greens filling over the Uttapam.

splash some fat around the Uttapam and lid if you have a lid, else you can let it make in the open.Once you notice the top is lightly steamed and the liquid base is not raw, press the filling down with a flat spatula.  Then flip the Uttapam to make on the other side. Turn the scalding up to medium high, so the vegetables make fast.

After about 30 to 40 seconds flip again and the Uttapam will be ready to be served.offer the Carrot bulb greens Uttapam along with Coconut Chutney for breakfast or dinner or even pack into a kids lunch box.
