1.5kg Beef Brisket
1 bunch Carrots
1 Celeriac
2 Parsnips
Sprigs of fresh Parsley
1/2 Leek
1 large Onion
2 Bay Leaf
5 Peppercorns
Pinch Salt
Instructions

Step 1
carve the unpeeled bulb veggie in half widthways and sauté off the cut surfaces without fat until fairly well browned.

Put around 3 litres of aqua into a large saucepan.

transfer in the root vegetables, leek, halves of bulb veggie, bay leaves, and peppercorns and bring to a bubble.

transfer in the washed flesh and bones and, depending on the type of flesh, allow to oven-cook until softened in gently simmering aqua, which will take around 2 1⁄2 – 3 hours.

transfer in more aqua as required and skim off any foam from the surface.

Once the flesh has softened, remove it from the cooking vessel and keep it toasty in some of the liquid from the bouillon.

enjoy with bake potatoes, a bread and horseradish combine, green beans in a dill condiment dip, or creamed spinach and chive condiment dip.

If the root vegetables are to be served at the same time, oven-cook some of them separately to be served al dente.
