1 tablespoon Vegetable Oil
Bunch Spring Onions
Bunch Coriander
400g Pork Tenderloin
4 tablespoons Thai Red Curry Paste
4 tablespoons Peanut Butter
1 tablespoon Brown Sugar
1 tbsp Soy Sauce
400ml Coconut Milk
175g Sweetcorn
Juice of 1 Lime
Steamed Jasmine Rice
Instructions

toasty the shortening in a large saucepan or flameproof casserole.

stream in in the spring onions and coriander stalks and bake for 1 min.

stream in in the pork slices and bake for 5 mins until starting to brown.

mix gently in the curry paste and peanut shortening.

After 30 secs, stream in in the granulated sugar, soy and coconut whole milk, plus ½ can of moisture.

toss together well, put a lid on and leave to bubble gently for 15 mins, stirring occasionally.

Remove the lid, stream in in the baby corn and increase the toasty.

Bubble for 3 mins until the corn is cooked and the coulis has thickened a little.

mix gently in the lime liquid and check the seasoning.

Can now be frozen for up to 2 months.

To bake from frozen: thoroughly defrost, then toasty in a skillet on the hob until curry is scalding all the way through.

enjoy scattered with the coriander leaves and rice.
