1 cup Yellow Moong Dal (Split)
1 cup Idli Rice
1 teaspoon Methi Seeds (Fenugreek Seeds)
Salt - to taste
6 Boiled egg
3 tablespoons Coconut Oil
1/2 teaspoon Methi Seeds (Fenugreek Seeds)
1/2 teaspoon Mustard seeds
2 Onions - thinly sliced
6 cloves Garlic - finely chopped
1 inch Ginger - finely chopped
2 Green Chillies - slit
2 sprig Curry leaves
6 Tomatoes - finely chopped
1 teaspoon Garam masala powder
1 teaspoon Red Chilli powder
2 teaspoon Coriander Powder (Dhania)
1/2 teaspoon Turmeric powder (Haldi)
Salt - to taste

To begin making Egg toast Masala Dosa - With Moong Dal Dosa mixture is first make the Moong Dal dosa mixture.

For this soak the dal and methi seeds together in liquid along and the rice in another container for at least three hours.Once soaked grind to a even thick mixture.

mix in seasoning to it and let it ferment for 8 hours. The day you are ready to make the dosa, we will make the egg toast masala for the stuffing.For the egg toast masala, first heat to boiling point eggs in sufficient liquid.

Once boiled, carve the eggs, dust some red chilli ground mix and seasoning over the eggs and keep aside.Next make the Egg toast MasalaHeat fat in a pot over medium burning up. Once the fat is burning mix in mustard seeds, methi seeds, curry leaves and allow it to crackle.Once they crackle, mix in the chillies, ginger, garlic and onions and saute until onions soften and turn golden brown.Once the onions are soft mix in the tomatoes, garam masala, chilli ground mix, turmeric ground mix and coriander ground mix.

Saute well and burning up on medium flame till you get a nice mushy masala.
