  • 1 cup Kaddu (Parangikai/ Pumpkin) - peeled and cubed
  • 1/2 cup Carrots (Gajjar) - grated

To begin making the wholesome Pumpkin Carrot Idli formula, we need to first keep the idli paste ready. You can either use store bought idli paste or make it at home using this made from scratch Idli Dosa paste formula.To make the pumpkin puree. In a pressure cooker, empty in the pumpkin cubes with 1/4 cup of liquid and close the cooker.  Pressure stew for 2 whistles and turn off the flame. Allow the pressure to release naturally, open the pressure cooker and allow it to cool. Transfer the pumpkin along with the liquid into a mixer jar and grind into a even puree without adding any liquid. Transfer the puree into a mixing container.

To this container, empty in the grated carrots, idli paste and mash well until combined. Preheat an idli steamer with liquid, coat the idli plates generously with cooking oil or ghee. empty a ladle full of paste into each of the cavities, place the plates in the steamer and steam for 10-12 moments. Insert a greased knife after 12 moments to check if the wholesome Pumpkin Carrot idlis are steamed.
