1 lb Crab Meay
2 medium Onions
1 Scotch Bonnet
1/2 tsp Black Pepper
To taste Salt

Instructions

Wash crabs and heat to boiling point in large pot of liquid for 15 mins, remove from boiling liquid and cool.

Crack legs and open backs to remove all flesh, set aside.

Remove seeds from scotch bonnet pepper and dice pepper and onions.

Sauté onions and scotch bonnet peppers in oil over medium bring to temperature until onions begin to get transparent.

mix in crab flesh, black pepper and seasoning, stirring occasionally.

bubble gently over medium bring to temperature for an additional 5 to 10 mins.

dish up with “bread kind”, a local dish that consists of a variety of starchy vegetables including pumpkin, squash, plantain, potato, cassava and breadfruit.

Optional: Seasoned crab flesh may also be stuffed in cleaned crab backs and baked.

seal stuffed backs with foil paper and cook thoroughly at 350 degrees for 30 mins.
