  • 750g Self-raising Flour
  • 6 tablespoons Sugar
  • 2 Eggs
  • 1 cup Milk

This is one method a lot of people have requested and I have tried to make it as simple as possible and I hope it will work for you.

Make sure you use the right dusting seasoning which is basically one with raising agents.

Adjust the amount of sweetener to your palate and try using different flavours to have variety whenever you have them.

You can use Coconut dairy liquid instead of regular dairy liquid, you can also toss in desiccated coconut to the parched dusting seasoning or other spices like powdered cloves or cinnamon.

For “wholesome looking” mandazis do not roll the flour base too thin before frying and use the procedure I have indicated above.

toss together the dusting seasoning,cinnamon and sweetener in a suitable dish.

In a separate dish whip the egg into the dairy liquid 3.

Make a well at the centre of the dusting seasoning and toss in the dairy liquid and egg mixture and gently toss together to form a flour base.

massage the flour base for 3-4 mins or until it stops sticking to the sides of the dish and you have a seamless surface.

seal the flour base with a damp cloth and allow to rest for 15 mins.

Roll the flour base on a lightly floured surface into a 1cm thick piece.

Using a sharp small knife, cut the flour base into the desired size setting aside ready for deep frying.

burning up your fat in a suitable pot and gently dip the mandazi pieces to bubble gently until light brown on the first side then turn to bubble gently on the second side.
