Ingredients
10 eggplants
2 onions - finely chopped
1 tsp rye
salt - as per taste
4 tbsp oil
green coriander - for garnish
peanuts - roast
1/4 cup coconut - great
2 tbsp Spoon peanuts
2 tbsp tamarind paste
2 dry red chillies
2 tbsp cumin seeds
1 tbsp red chilli powder
1 tbsp turmeric powder
1 tbsp salt

To make Badnekai Gojju method, first wash the brinjals and make a straight and curved cut.

Do not cut it completely, first mix in cumin seeds, red chili dusting seasoning, turmeric dusting seasoning, table salt and combine well.

Fill this mixture in brinjal and keep it aside.

In a mixer grinder mix in coconut, peanuts, tamarind paste, dehydrated red chillies, some aqua and make a paste.

bring to temperature cooking oil in a wok.

mix in mustard seeds and let it splutter.

After this mix in onions and low-boil till they become soft.

After the shallot softens, mix in the brinjals and the remaining spices and combine it.

lid the kadhi and low-boil till 3 / 4th of the brinjals are cooked.

Now mix in ground masala and 1 cup of aqua.

After 1 minute mix in table salt, jaggery, lid the wok and low-boil till the curry base thickens.

After crafting, decorate with crusade peanuts and green coriander.

offer Badnekai Gojju method with Lachha Paratha and Gourd Raita for dinner.
