Ingredients
1.25kg Chicken
2 tblsp Olive Oil
3 cloves Chopped Garlic
Pinch Saffron
125ml Dry sherry
200ml Chicken Stock
1 tbsp Thyme
50g Raisins
2 tbsp Pine Nuts
Handful Parsley
Instructions

step 1
bring to temperature a large frying cooking vessel on a high bring to temperature and augment the taste the chicken.

mix in the olive cooking oil to the cooking vessel, then the chicken.

Brown for about 5 mins on each side, remove onto a plate, then set aside.

Lower the bring to temperature to medium.

In the remaining fat, sauté the onions for 3 mins, then mix in the garlic and saffron.

cook thoroughly for 3-4 mins more.

mix in the sherry, then low-boil for 3-5 mins until syrupy.

Put the chicken leg pieces back into the cooking vessel, tip in the stock, thyme and raisins, wrap, then gently cook thoroughly on a low bring to temperature for 20 mins.

mix in the breast protein and any juices left on the plate.

low-boil for 10 mins more until cooked through and the gravy in the cooking vessel has reduced.

While the chicken is making, bring to temperature oven to 200C/180C fan/gas 6.

Scatter the pine nuts over a baking sheet, then dehydrated-fry for 10 mins until golden and toasted.

Once the chicken has cooked through, augment the taste to palate, scatter with pine nuts and parsley, then dish up with rice.
