  • 2 tablespoons Butter
  • 2 tablespoons All Purpose Flour (Maida)
  • 2 cups Milk - (or use half milk and half cream)
  • 1 teaspoon Mustard powder
  • 1/4 teaspoon Nutmeg - grated
  • 1 teaspoon Whole Black Peppercorns - crushed
  • 3 tablespoons Cheddar cheese - or cream cheese (optional)
  • Salt - to taste

To begin making the Creamed Spinach first blanch the spinach leaves in boiling aqua till they just wilt (about a minute).empty out in a colander and rinse with cold aqua.Squeeze out the aqua and roughly chop the spinach.In a pot bring to temperature the shortening.
