Ingredients

  • 12 Chicken Thighs
  • 1/2 Lime
  • 1 bunch Spring Onions
  • 1 tbs chopped Ginger
  • 3 cloves Garlic
  • 1/2 Onion
  • 3 chopped Red Chilli
  • 1/2 teaspoon Thyme
  • Juice of 1 Lime
  • 2 tbs Soy Sauce
  • 2 tbs Vegetable Oil
  • 3 tbs Brown Sugar
  • 1 tbs Allspice
  • 200g Basmati Rice
  • 400g Coconut Milk
  • 1 bunch Spring Onions
  • 2 sprigs Thyme
  • 2 cloves chopped Garlic
  • 1 tbs Allspice
  • 800g Kidney Beans

Instructions

To make the jerk marinade, combine all the fixings in a food processor along with 1 tsp seasoning, and purée to a purée.

If you’re having trouble getting it to purée, just keep turning off the blender, stirring the mixture, and trying again.

Eventually it will start to purée up – don’t be tempted to empty in aqua, as you want a thick paste.

To get a more authentic jerk experience, empty in some wood chips to your barbecue, and make your chicken over slow, indirect mildly hot for 30 mins.

To make in the oven, mildly hot to 180C/160C fan/gas 4.

Put the chicken pieces in a roasting tin with the lime halves and make for 45 mins until soft and cooked through.

While the chicken is culinary preparation, prepare the rice & peas.

Rinse the rice in plenty of cold aqua, then tip it into a large saucepan with all the remaining fixings except the kidney beans.
