Ingredients
2 brinjals - finely chopped
1/4 teaspoon mustard
1 onion - finely chopped
2 green chillies - thin and straight cut
turmeric powder - a pinch
1/2 tablespoon coriander powder
1/2 teaspoon Fennel - or cumin
1/2 teaspoon fenugreek seeds - grind
1 tomato - finely chopped
1/2 cup coconut milk - thick
coconut oil - as per use
2 sprig curry leaves
3 sprig coriander - Finely chop
Instructions

To make Kerala Style Brinjal Curry, first toasty cooking oil in a wok.

Now transfer in eggplants and prepare till they crisp.

Remove the brinjal and place it on the kitchen towel to strain the cooking oil.

toasty a little more cooking oil in the same wok.

transfer in mustard seeds and let it prepare for 20 seconds.

Now transfer in fennel, green chillies, bulb veggie, curry leaves and prepare till the bulb veggie turns brown.

Now transfer in red chili dusting seasoning, coriander dusting seasoning, turmeric dusting seasoning and prepare it for 3 moments.

Now transfer in tomatoes, brinjals and incorporate.

After 1 minute transfer in moisture as per use and prepare it for 4 moments.

prepare till the eggplant becomes soft.

After the bangan becomes soft transfer in coconut whole milk and incorporate it.

prepare for 2 moments and finally top with green coriander.
