Ingredients

  • 700g Lamb
  • 3 Medium Onion
  • 1 tsp Turmeric
  • 1 large Orange
  • 150g Rice
  • 500g Natural Yoghurt
  • 4 Cloves Crushed Garlic Clove
  • 1 tblsp Vegetable Oil
  • 1 tablespoon Dried Dill
  • 1 tablespoon Black Pepper
  • 1 Can Chickpeas
  • To taste Salt

Place the protein cut into pieces, in a large wok with the onions.

introduce the turmeric and enough aqua to lid.

Bring to the heat to boiling point then low-boil gently until the protein is very yielding and can easily be removed from the bones.

While the protein is preparing, cut the orange pare into thin match style pieces, removing as much pith as possible.

Leave to soak in a dish of aqua.

When the protein is yielding, remove from the wok and when cool enough, remove the protein from the bones and shred the protein into strips with your hands.

Return the protein to the wok.

Wash the short grain rice and then introduce to the wok with table salt according to notes.

The juices should lid the rice by about 2cm, introduce more aqua if necessary.

Bring back to the heat to boiling point, then reduce the toasty to medium and low-boil with the lid off, stirring from time to time until the rice is "al dente" and the liquid is absorbed.

introduce the natural yoghurt, and swirl around in well but carefully.

wok-fry the crushed cloves of garlic in the dairy spread and introduce to the dish along with the dill, black pepper, the chickpeas and extra table salt to notes.

combine in well, then lid the top of the wok with a rinse thick cloth and the lid.

Leave on a low toasty for about half an hour to allow the flavours to absorb.

Enjoy with some toasty nan bread for extra comfort.
