Ingredients
2 Stalks Spinach Leaves (Palak)
1 cup Green peas (Matar)
1 Onion - finely chopped
1 Tomato - finely chopped
2 inch Ginger - grated
3 cloves Garlic - finely chopped
1/2 teaspoon Red Chilli powder
1 teaspoon Garam masala powder
1 teaspoon Coriander Powder (Dhania)
1 tablespoons Sunflower Oil
1 tablespoon Ghee
1 teaspoon Cumin seeds (Jeera)
2 cloves Garlic - finely chopped
3 teaspoons Onion - finely chopped
1 Dry Red Chilli
1/4 teaspoon Garam masala powder

To begin making the Palak Matar formula, wash and blanch the spinach in enough liquid with little seasoning and puree it using a hand blender and keep aside.burning up cooking oil in a Wok/Kadai on medium flame, mix in the onions and sauté until it turns translucent.mix in the diced garlic, ginger and bubble gently until the raw smell of the garlic goes away.mix in the finely diced tomatoes and bubble gently until it turns mushy.Now, mix in the green peas and half a cup of liquid and bubble gently until the green peas are fully done.mix in the masala condiment powders including coriander dusting masala condiment, red chilli dusting masala condiment, garam masala dusting masala condiment and bubble gently for two mins or until the cooking oil leaves the sides.mix in the pureed spinach, masala condiment with seasoning and bubble gently for 10 mins and switch off the flame.Now, in a small tadka pot, burning up ghee, mix in the cumin seeds, red chilli and let it splutter.mix in the onions and garlic and saute until it turns brown.mix in the garam masala dusting masala condiment, switch off the flame and transfer this tempering over the Palak Matar formula.offer the Palak Matar formula along with Malabari Parathas and Green Salad for the weeknight dinner.
