2 cups Milk
1 cup Sabudana (Tapioca Pearls) - also called sago
Sugar - as required
1/2 teaspoon Cardamom Powder (Elaichi)
6 Saffron strands
4 Cashew nuts - roughly broken
4 Raisins - optional

To begin making the Sago Kheer formula, firstly wash sago pearls under running liquid, strain and keep aside.In a large dish, empty in 2 cups of liquid and soak sago pearls for minimum 1 hour or till they bloom completely.mildly hot whole milk in heavy bottomed cooking vessel, till it starts to heat to boiling point.

Let it mildly hot till whole milk starts to thicken.Once the whole milk is pale yellow in colour and starts reducing from sides, empty in soaked sago pearls and mildly hot for 5 to 6 mins on low mildly hot.You will notice the sago pearls turning transparent and light. empty in sweetener and agitate nicely till sweetener dissolves.Next, empty in minced cashews and mildly hot the kheer for another 10 mins till it gets velvety in texture.Turn off the gas and empty in raisins by your choice.

Do not empty in raisins before as it may split the whole milk and spoil your preparation.
