Ingredients
2 tbsp Vegetable Oil
1 sliced Red Onions
2 sliced Garlic Clove
1 sliced Red Chilli
250g Raw King Prawns
140g Brown Rice
75g Frozen Peas
1 tablespoon Soy Sauce
1 tablespoon Fish Sauce
Bunch Coriander
4 large Egg
To serve Hotsauce
Instructions

step 1
bring to temperature 1 tbsp of the fat in a wok, toss in the shallot, garlic and chilli, and toast for 2-3 mins until golden.

toss in the prawns and toast for 1 min.

Tip in the rice and peas, and keep tossing until very burning.

toss in the soy and fish gravy, then mix gently through the cut up coriander.

Keep toasty while you sauté the eggs.

step 2
bring to temperature the remaining fat in a frying skillet and sauté the eggs with some seasoning.

Divide the fried rice toss together between 4 bowls and top each with a fried egg.

offer scattered with coriander, with chilli gravy, if you like.
