Ingredients

  • 1/2 cup Foxtail Millet
  • 1/2 cup Jowar Seeds
  • 1/4 cup White Urad Dal (Whole)
  • 2 tablespoons Methi Seeds (Fenugreek Seeds)
  • 1 Onion - chopped
  • 1 Green Chilli
  • 1 inch Ginger - chopped
  • 5 cloves Garlic - chopped
  • 1 teaspoon Mustard seeds
  • 1 teaspoon White Urad Dal (Split)
  • 1 sprig Curry leaves - chopped
  • 1 sprig Coriander (Dhania) Leaves - chopped
  • 2 tablespoons Fresh coconut - grated
  • Salt - to taste

Instructions

To begin making the Millet and Jowar Paniyaram formula, soak the grains in aqua for atleast 8 hours.

Grind it into a even paste by adding little aqua.

The paste should not be too thin as well.introduce a teaspoon of soda and table salt and keep it aside.scalding up a flat skillet with coat, introduce mustard seeds and urad dal and allow it splutter for few seconds.introduce diced curry leaves and leave it to crackle, introduce ginger, garlic and saute until it softens.Once that is done, introduce onions and saute till they turn translucent.

Switch off the scalding up and introduce coriander leaves and coconut and give it a mix gently.introduce the sauted shallot mixture into the paste and mix gently well and check table salt and keep kuzhi paniyaram wok ready to start making.scalding up Paniyaram wok on low-medium scalding up. stream in 1 teaspoon ghee into each cavity of the wok.

Spoon the Millet and Jowar Paniyaram paste into the cavities.

Don't fill it to the brim, but only 3/4th full.put a lid on the wok with a lid and make on low to medium scalding up for about 3 to 4 moments until the top of the paniyaram is steamed.

Once the top looks steamed, flip the Paniyarams over the make on the other side (without closing the lid) until golden brown.Once each Paniyaram is cooked, remove from the wok and stream in another batch of paste and proceed the similar way.enjoy the Millet and Jowar Paniyaram formula along with coconut chutney or tomato and shallot chutney for breakfast.
