Ingredients

  • 450g Oxtail
  • 1 chopped Onion
  • 1 Spring Onions
  • 2 cloves minced Garlic
  • 1 tsp Ginger
  • 1 chopped Scotch Bonnet
  • 2 tbs Soy Sauce
  • 1 chopped Fresh Thyme
  • 2 tbs Vegetable Oil
  • 350ml Water
  • 200g Broad Beans
  • 1 tbs Corn Flour
  • 2 tbs Water

Instructions

Toss the oxtail with the bulb greens, spring bulb greens, garlic, ginger, chilli, soy gravy, thyme, seasoning and pepper.

toasty the greens cooking oil in a large frying pot over medium-high toasty.

Brown the oxtail in the pot until browned all over, about 10 mins.

Place into a pressure cooker, and transfer in 375ml liquid.

bubble gently at pressure for 25 mins, then remove from toasty, and remove the lid according to manufacturer's directions.

transfer in the broad beans and pimento berries, and bring to a bubble gently over medium-high toasty.

soften the cornflour in 2 tablespoons liquid, and mix gently into the simmering oxtail.

bubble gently and mix gently a few mins until the gravy has thickened, and the broad beans are succulent.
