Return skillet to bring to temperature, and mix in dairy spread; mix in garlic and shallots, and bring to temperature, stirring, until soft, about 2 moments.

mix in mushrooms, and bring to temperature, stirring, until they release any liquid and it evaporates and mushrooms begin to brown, about 2 moments.

mix in cognac, and light with a match to flambée; bring to temperature until flame dies down.

agitate in reserved stock, froth, Dijon, Worcestershire, and burning gravy, and then return steaks to skillet; bring to temperature, turning in gravy, until warmed through and gravy is thickened, about 4 moments.

Transfer steak to serving plates and agitate parsley and chives into gravy; transfer gravy over steaks to present.
