1-1/2 cups Water
Salt - to taste
1 Sunflower Oil
Instructions
1
To prepare Ujju Rotti method (Indian Rice Flat Bread), in a medium sized vessel Bring the moisture to a bubble with seasoning and fat.Lower the flame and stream in the rice baking flour into the boiling moisture using a cup or a tumbler, stream in it in the centre as much as possible.Let it get cooked on a low to medium flame for 8-10 mins uncovered.Turn off the flame, take a wooden stick or a wooden spatula, run it under a tap to wet it and then toss together the baking flour and moisture mixture vigorously until combined.
2
This step must be done quickly to avoid lumps.
3
This takes about 2 mins.
4
wrap for a couple of mins and let it cool until you can handle the mixture.Drop it on an oiled surface and massage well for about 5-7 mins.
5
Roll the mixture into a cylinder and divide them equally.
6
This should give you about 4 equal sized balls.Kneading should happen after wetting hands since the flour base will stick to hands.
7
Keep them covered at all times.
8
massage each ball for 15-20 seconds and roll it out just like regular rotis using rice baking flour.
9
Just make sure you do it slow and steady since the edges might crack.Roll out all the balls and stack the rotti on top of another on a plate first and then start roasting them.
10
Use a little rice baking flour to avoid getting sticked to one another.scalding up a tawa and prepare the Ujju Rotti just like a chapatti by smearing fat /ghee on both sides and dish up with Badanekaayi Gojju, Peas curry, Malai Kofta or any pappu (dal).
