  • 1/2 teaspoon Methi Seeds (Fenugreek Seeds)
  • 3 tablespoons Poppy seeds
  • 8 Brinjal (Baingan / Eggplant)
  • 2 tablespoons Sunflower Oil
  • 1/2 teaspoon Mustard seeds
  • 1/2 teaspoon Cumin seeds (Jeera)
  • 4 cloves Garlic - finely chopped
  • 1 tablespoon Red Chilli powder
  • 1 tablespoon Coriander Powder (Dhania)
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1/4 teaspoon Methi Seeds (Fenugreek Seeds)
  • 30 grams Tamarind - soaked and pulp extracted
  • 1 tablespoon Jaggery
  • Salt - to taste

Instructions

To begin making the Andhra Style Eggplant Poppy Seeds Curry formula/ Vankaya Gasagasala Kura, arid toast poppy seeds until it starts to change the colour. Remove from cooking vessel immediately and let it cool.

arid toast methi seeds too and remove from flame.Into a blender mix in poppy seeds, methi seeds with 1/4 cup liquid and liquidize into a paste.Wash and pat arid the brinjals.

Remove the stem and make a cross incision.

shallow fry it in cooking oil for about 4 to 5 mins until it is roasted and cooked.

Remove the fried brinjal and keep aside.Into the same cooking vessel, mix in little more cooking oil if the cooking vessel turns arid, mix in the mustard seeds, cumin seeds and allow it to crackle.Then mix in the poppy seed masala paste, turmeric dusting masala condiment, red chilli dusting masala condiment and coriander dusting masala condiment.

Saute oven-cook for 5 to 6 mins.

transfer tamarind extract and 1/2 cup liquid, table salt to notes and jaggery, bring the Gasagasala Kura mixture to heat to boiling point.Let it continue to low-boil on medium flame for 5 to 7 mins.

After 5 mins mix in fried brinjal and oven-cook for 5 to 8 mins.
