  • 140g Rice Noodles
  • 1 Carrots
  • 1/2 Cucumber
  • 2 Chicken Breasts
  • 50g Radish
  • 1/2 Red Onions
  • Bunch Mint
  • 25g Peanuts
  • 1 chopped Red Chilli
  • Zest and juice of 1 Lime
  • 1 ½ tbsp Fish Sauce
  • 1 ½ tbsp Soy Sauce
  • 1 ½ tbsp Sesame Seed Oil

Instructions

step 1 To make the dressing, whip all the components together in a large serving dish.

make the noodles following pack procedure, then empty out and toss in to the dish with the dressing.

step 2 strip the carrot into long strips using a greens peeler.

Do the same for the cucumber, until you reach the seeds (discard them).

toss in the carrot and cucumber to the noodle mixture along with the shredded chicken, radishes, red bulb greens and mint.

Toss well to coat in the dressing, scatter over the peanuts and present.
