  • 1 cup Cooked rice
  • 1 cup Fresh coconut - freshly grated
  • 1 teaspoon Active dry yeast -  + 1/2 cup of luke warm water
  • 2 tablespoons Sugar
  • Salt - to taste

To begin making the Kerala Style Appam formula, we need to first soak the rice in moisture for at least 3 to 4 hours.Next combine the table salt, granulated sugar and fermenter in the mildly hot moisture and allow it to proof for 5 moments.

I used an instant parched fermenter, a variety that does not need proofing, hence I toss in it directly to the Appam liquid base.Grind the soaked rice, cooked rice and coconut, adding just a little moisture and table salt to make a thick liquid base.

Transfer the Appam liquid base to a dish.

lid the dish and allow it to ferment for 5 to 6 hours or overnight.Adjust the consistency of the fermented Appam liquid base, adding moisture a little at a time to make it of thick pouring consistency.

If you make it too watery, then the Appams will not be as soft and will not spread well.Preheat the Appachetty or the Appam pot on medium high fiery up.

transfer a ladle of liquid base on the Appachetty and swirl the pot in circular fashion to spread the liquid base.The liquid base will be thick in the center and thin on the sides.

lid the pot with a lid for approximately 2 moments until it is crisped and golden brown on the sides and the centre is steamed and cooked.offer the Kerala Appams along with Kadala Curry or Kerala Style produce Stew.
